Paleo Banana Muffin Recipe

If you are a banana fan like me it's only normal you have a few that go ripe on you too quick before you get the chance to eat them. I love banana bread so when I found this recipe I had to try it out for myself and plus it's clean...even better. This recipe makes about 12 muffins and takes about 30-35 minutes in total.

Ingredients:
  • 3 medium-sized ripe bananas

  • 1 cup smooth peanut butter (I use Justin's brand)

  • 1/4 cup coconut oil, softened or melted

  • 3 eggs (I use Nellie's organic)

  • 2 Tbsp pure maple syrup

  • 2 tsp vanilla extract

  • 1 cup almond flour

  • 1 tsp baking soda

  • 1/2 tsp salt

Assembly:

  • Preheat the over to 350 degrees F.

  • In a blender, puree bananas until you reach your desired level of smoothness (I prefer mine totally smooth).

  • Add peanut butter, coconut oil, eggs, syrup, vanilla extract. Pulse or puree until smooth.

  • Add almond flour, baking soda, and salt. Gently pulse until combined.

  • Scoop into a muffin tin (grease or spray if you're not using a nonstick pan).

  • Bake 20-22 minutes, or until toothpick inserted in the center comes out clean.
